Recipe 1: Cast Iron Skillet Pizza

Ingredients:

  • Pizza dough (store-bought or homemade)

  • Pizza sauce

  • Cheese (mozzarella, cheddar, or your favorite type)

  • Toppings of your choice  (such as pepperoni, bell peppers, onions, mushrooms, etc.)

  • Olive oil

Instructions:

  1. Preheat your oven to the highest temperature it can go (usually around 500°F/260°C) and place your cast iron skillet inside to heat up.

  2. While the skillet is heating, roll out the pizza dough to fit the size of your skillet.

  3. Once the skillet is hot, carefully remove it from the oven and brush the bottom and sides with olive oil.

  4. Carefully transfer the pizza dough to the hot skillet, pressing it gently to cover the bottom and slightly up the sides of the skillet.

  5. Spread a thin layer of pizza sauce over the dough, leaving a small border around the edges.

  6. Sprinkle a generous amount of cheese over the sauce, followed by your desired toppings.

  7. Return the skillet to the oven and bake for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.

  8. Carefully remove the skillet from the oven using oven mitts, and let the pizza cool for a few minutes before slicing and serving.

Recipe 2: Cast Iron Roasted Chicken with Vegetables

Ingredients:

  • Whole chicken, about 3-4 pounds

  • Assorted vegetables (such as carrots, potatoes, onions, and garlic), peeled and cut into chunks

  • Olive oil

  • Salt and pepper

  • Fresh herbs (such as rosemary, thyme, and sage), chopped

Instructions:

  1. Preheat your oven to      425°F/220°C.

  2. Rub the chicken with olive oil and season generously with salt and pepper, both inside and out.

  3. Heat a cast iron skillet over medium-high heat on the stovetop and add a little bit of olive oil.

  4. Carefully place the seasoned chicken in the hot skillet, breast-side up, and sear for 5-6 minutes until the skin is golden brown and crispy.

  5. Flip the chicken over and sear the other side for another 5-6 minutes.

  6. Scatter the chopped vegetables around the chicken in the skillet.

  7. Transfer the skillet to the preheated oven and roast for about 45-60 minutes, or until the internal temperature of the chicken reaches 165°F/74°C and the vegetables are tender.

  8. Remove the skillet from the oven and let the chicken rest for a few minutes before carving.

  9. Sprinkle with freshly chopped herbs before serving.
